I had some leftover lamb and was just dying to make shepard’s pie.
1. Make filling. Brown lamb, onions, and garlic. Add salt, pepper, paprika, and chopped rosemary and sage. Add a little water and/or stock and steam carrots. When carrots are tender, add parsley and tomato paste. Finally thicken with flour until desired consistency.
2. Make mashed potatoes. Cube and boil potatoes in water with salt and pepper(I like using yellow potatoes for this and leave the skins on). Make sure the potatoes are very soft in order to mash them easily in to a creamy consistency. When potatoes are soft enough add ghee, yogurt and chopped parsley. Whip until a creamy texture.
3. Shred cheese (Parmesan) over the top and broil it to a golden brown. In baking dish, scoop mashed potatoes on to the top of the lamb mixture then add cheese and broil.
