Tuna Tartare

Today I made tuna tartare with wanton chips.
Bite sized pieces of tuna and avocado were layered with goat cheese in a ramekin which was turned upside down over the plate and lifted off in order to make an attractive mound. The tuna got salt and pepper, the avocado got some lime juice and salt and, in order to make it creamier, the goat cheese was mixed with a bit of milk.
The wantons were cut diagonally in to triangles and baked.
The sauce was made with avocado, fresh lime juice, wasabi, mayo, and parsley.
