Today I made chicken piccata.
I cut 2 organic, free range chicken breasts in half, pounded them out, dredged in organic wheat flour, and lightly fried in extra virgin olive oil and organic ghee. At the same time I was frying the chicken I sauteed some onions and garlic in the part of the pan that was not over direct heat. I then made a pan sauce with organic lime juice, capers, “Real” salt, and pepper. I tried to fry the capers, but it seemed to be an unnecessary step and it took away from their flavor. I then topped the chicken with the sauce and organic parsley.
