Today we had red lentils topped with organic, local, radish (daikon) greens braised with bacon.
I try to buy as whole as foods as I can when I shop so I come up with quite a bit if greens regularly, including beets, radishes, carrots, turnip, etc. Of course,as everyone knows, the best way to get almost anyone to eat almost anything is to cook it with bacon. I think this goes doubly so with greens, lol.
So I started with cooking up some chopped bacon and then tore just the leafy parts off the greens and tore them up in to the bacon grease (without draining grease or adding water). At this point onion, garlic and hot pepper can be added.
With the lentils I added a bit under 2 cups of salted water to 1 cup of lentils, boiled for 10 minutes, then turned off the heat and let sit covered for another 20 minutes or so. Then I fluff the lentils with a fork while at the same time adding a bit of ghee.
I put a dollop of organic, whole, plain yogurt (essentially acts like sour cream, but more nutritious) on the side.
