I have had such an issue recently with preserving food while keeping as many vitamins and nutrients as possible intact. Of course the normal thing to do is to “can” food in a pressure cooker. This process subjects the food to harsh temperatures for an extended period of time therefore killing the living organisms that are present in it (which, of course, is the point).
What I am trying to do with my food is to keep the beneficials (vitamins, nutrients, microorganisms,..) intact and alive in order to provide optimum nutrition to the individual that consumes it.
This presents a unique situation when I am looking for ways to preserve the food. So I tried just boiling the Mason jars until they sealed, but that did not work. Then I tried parrifin wax…
… that did not work out so well either. The wax did not seal. Not to mention how expensive it is!
So now I am trying to freeze the Mason jars. I wanted to stay away from the freezer, but, for now, I can deal with it. Well we will see how this works. Hopefully Mason jars work better than plastic freezer bags. I spent quite some time cleaning the fridge and freezer when they busted open.
