I fried some plantain slices in a bit of ghee, then made a pan sauce by adding some honey to the ghee that was left in the pan after frying. I also kept a cinnamon stick in the ghee the whole time in order to infuse the oil with some cinnamon flavor.
Tonight we had smoked portobello mushrooms with purple heirloom tomatoes and cheese (parmigiana regiano, asiago, mozzarella). I smoked the mushrooms with mesquite and hickory chips then topped them with garlic, parsley, Thai pepper, salt, pepper, tomato, parm., asiago., mozzarella and onions (in order starting front the bottom). This was New Year's brunch... scrambled eggs with sautéed asparagus, pancetta, and Asiago. And of course a slice of buttered baguette on the side.
I cubed and lightly steamed some Daikon Radishes, turnips, carrots and potatoes with broccoli (all the vegetables I needed to get used up before they went bad). That mixture was put on a bed of lettuce then sprouts and (in this particular example) pulled pork on top. A dressing was made with vinegar and oil.
