Green Peppers Stuffed with Rice and Chorizo with a Side Salad and Mashed Plantain

Tonight we had green peppers stuffed with basmati rice and chorizo,  topped with Parmesan (regiono of course!) and Mozzarella cheese. Turnip and Daikon Radish Salad with Sprouts

I cubed and lightly steamed some Daikon Radishes, turnips, carrots and potatoes with broccoli (all the vegetables I needed to get used up before they went bad). That mixture was put on a bed of lettuce then sprouts and (in this particular example) pulled pork on top. A dressing was made with vinegar and oil.
